PONTIANAK, KALBAR-JAYA NEWS.COM- In the interior of Kalimantan, there is a rare food that can only be enjoyed by local people. The food is called “Pansuh”, a traditional breakfast dish made from river fish cooked in bamboo.
Pansuh has been part of the culinary culture of the Dayak people in Kalimantan for centuries.
“The process of cooking Pansuh is very unique, namely by placing fresh river fish in bamboo which has been filled with spices, then grilling it over a campfire, giving it a distinctive taste and appetizing aroma,” explained Edy, a culinary expert in Pontianak to Journalist Jayanews.com via mobile, Saturday morning 10 May 2025.
This rare food is not only delicious, but also has high nutritional value. The river fish used is rich in protein and omega-3, while the spices used have medicinal properties that can increase the body’s resistance.
Even though Pansuh has become part of local culture, this food is still rarely known by the wider community. Therefore, several local culinary entrepreneurs are trying to promote Pansuh as one of the leading culinary destinations in Kalimantan.
With its unique taste and high cultural value, Pansuh is expected to become one of the rare foods that is popular among tourists and culinary lovers.*
